Ingredients (Per serving):
1 ear of white corn (peeled with corn husk wrapped in the back and tied)
¼ oz. mayonnaise
¼ oz. unsalted butter, room temperature
2 oz. Cotija cheese, finely grated
1 pinch Tajin pepper mix (Essential for the final taste of the corn! Pepper mix can be purchased in a Mexican specialty store.)
1 lime wedge
Instructions:
1. Grill corn in an open flame (could be a grill or on a stove top), grill until kernels are tender but not too soft
2. While grilling the corn, mix the mayo and butter in a bowl until well blended
3. Once the corn is done grilling, spread the mix of mayo and butter evenly on the corn with a plastic spatula or spoon
4. Sprinkle the cheese over the mix of mayo and butter to completely cover the corn
5. Sprinkle the Tajin pepper mix over the cheese, feel free to add more if desired
6. Place the corn on the small oval plate with a lime wedge next to the corn
